Born in the heart of Jerez — where brandy is not just made, but lived — Don Mano stands as a benchmark of Spanish character.
Its rich, deep flavor profile is the result of time-honoured wisdom and artisanal mastery, brought to life at the legendary González Byass distillery — one of Spain's oldest and most revered houses.
Don Mano is a fragrant chronicle of Jerez, where time matures in oak barrels and tradition is poured into every sip. Crafted using the solera system and aged in former sherry casks, this brandy captures the sun-soaked rhythm of Andalusia and the nobility of centuries-old cellars.
Every step is not just a technical phase but an artisanal gesture, infused with the sunlight of Andalusia, the stillness of Jerez cellars, and the wisdom of González Byass masters.
White wine from Airén or Palomino grapes is distilled in traditional copper pot stills, producing aromatic holandas at 65–70% ABV, or column stills for lighter aguardientes up to 86% ABV. These are blended, then adjusted to 60–65% before aging.
The brandy matures in seasoned American oak barrels previously used for sherry, absorbing notes of nuts, dried fruits, and noble wood. This stage gives Don Mano its golden-amber hue and signature softness.
"Each drop seeps into the wood grain, exchanging secrets with the century-old sherry cask."
Following the traditional solera-criadera system, the young spirit gradually blends with older brandy — a centuries-old technique that ensures complexity, consistency, and the living character of Don Mano.
The master blender combines distillates of various ages and characters — a creative act that crafts the unique voice of Don Mano: layered, expressive, and perfectly balanced.
"Like a conductor leading an orchestra, the blender harmonizes each note into a single symphony."
Impurities are removed for clarity without sacrificing depth. The brandy is then brought to its final strength of 36% vol. with demineralized water, followed by precise homogenization for flavor consistency.
"Like a sculptor polishing marble, the master refines the spirit to perfect harmony."
Chemical, microbiological, and sensory tests are conducted. Only batches that meet strict D.O. standards make it to the bottle — where Don Mano is sealed with pride, ready to meet the world.
"Like an artist signing their canvas, Don Mano is sealed with pride."
